Grilled MESOMEX Cilantro & Serrano Shrimp Kabobs

1 pound large shrimp, peeled and deveined
white onion, cut into wedges
1 large orange or yellow bell pepper, cut into
1 1/2 cups pineapple chunks, fresh or canned (optional, if you
don't like fruit with seafood, you can leave this off)
4 ounces MESOMEXTM Cilantro & Serrano Sauce
In a large resealable plastic bag, combine 4 ounces of MESOMEXTM Cilantro & Serrano Sauce and
shrimp. Refrigerate for at least 30 minutes. Drain and discard marinade. On metal or soaked wooden skewers, alternately thread the shrimp, vegetables, and
pineapple (if using). Grill kabobs for 3-5 minutes on each side until they turn pink and are cooked through. Turn
the shrimp kabobs only once for best results. Once the kabobs are plated, squeeze a little lime juice over them and
drizzle some MESOMEXTM Cilantro
& Serrano Sauce over the top.
Makes 4 servings.
Delicious served with a fresh arugula salad and brown rice!
